I was re-watching the SP S600 technician training video , and noted that the jam nut was inserted with the protruding part facing outward (please see attachment). However, if my memory serves me, I recall during my own training that I was told the protrusion on both the steel washer and jam nuts faces inwards towards the second stage case. Which is correct?

Sorry, just to be clear by what I meant by "protrusion", here's the same pic with an arrow pointing to the "protrusion". I recall during my training that it should go in the other way round.
