Is there any reason not to put an spg on both posts in doubles? If you have to shut the left post you lose your ability to monitor gas quantity right?

Depends on what you mean by doubles and/or how you intend to dive them.
I think I know what you are thinking but most divers certified after 1980 know only one kind of doubles, those with two post and two regulators.
