What it the max time before a dive I can pack absorbent into the canister?

As long as you're not exposing the pre-packed sorb to air/other sources of CO2, or allowing it to dry out, there's no theoretical limit.

Practically speaking, I would be cautious about packing scrubbers far in advance and then trying to prevent the sorb from drying out. You may find yourself with sorb that has enough CO2 fixing activity to get through a pre-breathe no problem, but that isn't going to get you through a dive.
