Me, my gf and her kid are planning on making a quick trip; we unfortunately don't have time to do the MV Fling.
We found the comal river drift dive, but that's about 3 hours out of our way.
 
Might try the Blue Lagoon in Huntsville, Texas. We just dove here yesterday and today. Lagoon 1 has around 20 to 25 feet visibility and lagoon 2 around 6 to 10 feet.

Around Houston You have The Blu Lagoon as referenced above.
Lake Longhorn just south of Houston and Mammoth Lake again south of town.
Of the three Mammoth is the largest with the most things to see.
There is good diving in the gulf but you would need to call the local shops to see if anyone has a trip you can join at the last minute. I would not try beach diving not being familiar wit this area. The weather has been very rainy this summer which affects gulf trips. Yuo might try the Texas forum someone their may know of an upcoming day trip.
