I was absent-mindedly talking to my father in law while trying to remove a LP hose to replace with Miflex. It wouldn't come off so I really out some muscle into it to try and get it off before he pointed out that I was turning it the wrong way . (always great to pull a move that like in front of a father in law)

Any damage I need to worry about? If I damaged the o-ring it came off with the old hose, so is there anything else behind the 5-7 ft lb recommendations?

If you're really paranoid you can get out a magnifying glass and look closely at the threads in the regulator body. But, if the miflex hose went in fine and sealed fine, it's unlikely you did any damage.

Don't know. Sorry for being non-responsive.

but:
...5-7 ft lb recommendations?
Curious where you got this recommendation. The maintenance manuals I have give various recommendations, but they almost universally top out at or below 40 inch-pounds or 5 Newton-meters, both of which are under 4 foot-pounds.

The most likely consequence of over tightening a hose fitting is for the hose fitting itself to shear off. If that did not happen, then as Matt pointed out, it's unlikely you did any damage. Hook it up, leak check it and don't make anymore mistakes in front of your father-in-law, in fact, tell him that was a test and he passed.

The only way to determine if you've done any damage is to put another o-ring on the fitting, replace it, open the valve and pour some soapy water on it and see if it bubbles.

Water test it, hook it up to a tank and sumerge it, look for small bubbles coming from the LP port on the first stage.
