Cavern is a dedicated 2 day class plus a healthy amount of bookwork and online test before arrival. Alot of people come in that weekend to train and dive since it's a great 4+ day holiday. One of the best Cavern/Cave shops in Orlando is Dayo Scuba. Even though the online calendars says the shop is closed, trust me that TJ, Denise & Carol are busy teaching that weekend. Easy going teachers who have certified thousands of cavern & cave divers. Tell 'em I sent you and they'll tell you stories that are flat out lies or atleast no photo !! :)

It's mid October right now and you'll need to quickly schedule and start work on the class and arrangements (like books, car rental or rides). Cavern is a great class even for open water divers because you'll learn so many backup skills & tricks when things go awful wrong underwater.
