I certainly haven't dived all the good sites here but I would recommend the Elbow at Turneffe.
 
Moved to Central/South America as its more relevant there, welcome to the board and post an intro back in the intro forum if you so desire!

half moon caye wall

I have to second this... Half Moon Caye is lovely, the 2 sites I liked the best were called Painted Wall and Cathedral. Lovely wall and swim throughs... it is a weather-dependent site according to our dive operator, however...

I also really enjoyed Half Moon Caye. Blue Hole is another obvious contender, though it's not for everyone. It's farily deep (130' to see anything interesting) and you won't see much color or life other than a few big fish and maybe some sharks, but I thought the formations (especially when viewed with plenty of nitrogen hammering through your veins) were very cool.
 
We saw quite a few spotted eagle rays there, among other great critters.

So you never did answer the question...which is the one dive you'd do in Belize??

I'm interested as I'll be there in May...

If you take one dive trip in Belize, I'd recommend the full day Blue Hole trip with Amigos Del Mar. When we took this trip, your first dive is at the Blue Hole, followed by a two dives at Half Moon Caye if I remeber correctly, with a good lunch of stewed chicken, rice & beans (what else?) dessert, fruit, etc. We used 28% O2 Nitrox from Protech Belize for the Blue Hole dive and 32% O2 Nitrox for the other two dives.
