So I got a used Oceanic FDX10 that came with the DIN adapter on it, and I have the old yoke parts as well. I was able to get the DIN adapter off with a soft-jaw vice to hold it and a 13/16 socket. But there's no room to put a socket inside the yoke to tighten up the yoke port into the body of the 1st stage.

I assume there is a special tool to do this. Does anybody know where I could get one? My LDS wants to send it out to have this done, which is silly...

Surprised your shop doesn't have one- it's kind of essential to do any maintenance on regs. FYI- yoke retainer usually are tightened to a specific torque setting spec'd by the manufacturer. Under, or over tightening can affect how the regulator will perform over time.
 
One other question - any idea how much torque I should use? The DIN adapter was on there like a b*tch.

I believe it is 20 ft pounds.

My question is why do you want to replace the DIN connection with yoke? Just get a yoke adapter for your DIN regulator and enjoy the best of both worlds.
