I'm writing this because I know a lot of divers visiting Grand Cayman have an interest in eating lionfish. A new restaurant just opened up called Vivo, its in West Bay on the same premises as Divetech's Lighthouse Point. Currently they make filets, ceviche, curry as well as a particularly tasty lionfish sandwich.

Aside lionfish, everything else is vegetarian and everything I have tried so far is awesome.

Vivo buy their lionfish from divers who catch the fish on island, they don't import from other islands. They also give credit for divers who catch fish and turn it in to the kitchen so it makes for a pretty good day to spear some fish in the morning then have it cooked for your lunch.

Eat em to beat em!

i am currently on Grand Cayman and have seen some big friggin lionfish underwater. those lionfish are too big for Groupers to eat. Lionfish is very tasty. had a bunch of it on last trip to Dominica this year. there are almost no Lionfish i saw last week on Little Cayman as the Groupers eat them. Currently on Grand Cayman and have seen quite a few Lionfish so far. munch them up!
 
We were diving with divetech for the last 2 weeks and did several shore dives out of lighthouse point and ate a few items at Vivo we enjoyed everything that we tried. It is located right next to divetech and about 10 ft from the walkway where you head out to dive making it a convenient place to hang between dives.
