Hi diverichards, welcome to Scubaboard.
When I was in ZIH, in March '06, I used Ixtapa Aqua Paradise. I liked them very much. you can check them out at: http://www.ixtapaaquaparadise.com/
I have also heard very good things about Carlo Scuba, but I have not dived with them.

I've gone with Carlo Scuba both times I was in town. It is one of my favorite operators in the whole world. And, after the dive, you can sit on the porch of their "shop" which is right on the beach (one of my 3 favorites in the whole world).
