Do you think the Ipad pro 11" is a good replacement to the macbook pro while on holidays for editing UW pictures ? If yes what would be the best editing software to use ? I am not talking bout those editing apps that need monthly payment but rather one time payment.

You can use Lightroom for free without a monthly payment though if you want access to some editing features, you will need to pay a monthly payment. It depends on how much you are looking to edit. The basic stuff is fine. I think it would be good for on the fly edits. There are some great resources online on how best to get your photos onto the iPad, apart from using wifi. There are many USC-C sd card readers and such options.
