Inon Z-240 Strobes. Which diffusers to use?

Have just bought 2 Z-240s upgraded form my S2000. About to head to Malapasca diving lotsa macro and nice walls (no lights cn abe used for thresher sharks) and then on to Coron bay wrecks wiht lower viz.
I have got 3 diffusers with them the white/blue one then 2 different temperatures 4900, 4600K. Which is best to use for topics, etc Excuse my ignorance.
 
Z240's have a cooler color temp than some strobes so the 4900 or 4600 would likely give better blue background results on wide angle. The goal is to light the foreground with a light color that when balanced, gives a nice blue to the natural light available. Enough of us used warming gels on Z240's that Inon provided the new 4900 and 4600 diffusers.
 
What are warming gels and how do you use them? I have a Z240 and never heard of this?
