While traveling to go diving one of the other most memorable things for me is the discovery of new foods, exceptional foods, or simply better quality foods. A few examples that I can think of are:

Puerto Vallarta: Camarones (shrimp). They are way better than any shrimp I've had anywhere else.
Sparkling Lemonade

Costa Rica: Lizano Salsa.
Fried Plantains (way beyond others that I've had)
Coffee. It was all great

San Miguel (Cozumel): Burritos (Crazy King and Gorditos). Much to my surprise a burrito is not always just a burrito. Salsa Pina at La Catrina. Coffee.

Playa del Carmen: Fresca Pomelo and Tacos Pastor at Los Fabulosos. Coffee. I bought some sea bass at WalMart and cooked it and it was possibly the best fish I've ever eaten.

Have any to share so I can go there and try them?

Love this topic! I'm a big foodie, but unfortunately as a vegetarian with food allergies I often get screwed when I travel. (I'm also spoiled living in Manhattan.)

But here are a few things I adored which were unique:

Xtabentún liqueur in the Yucatán region - A honey & anise liqueur made from anise seed & fermented honey produced by honey bees from the nectar of xtabentún flowers.

Agua fresca in Mexico (non-alcoholic) - A combination of fruit & often flowers (sometimes with grains & seeds blended with water & some sugar. So refreshing! (You mentioned fresca pomelo which I assume is in the same category, but there are so many others to try.)

Key Lime Pie made with real key limes in the Florida Keys.

Freshly-baked pan de sal (salt bread) in the Philippines.

The fusion of Caribbean & modern East Indian flavors at Anse Chastanet in St. Lucia.

I just got back from Cozumel the other day. I have been a huge fan of Gorditos since they opened. They never disappoint and their vegetarian burrito is super awesome, actually. I discovered the Lobster Shack and 4 Tacos on this trip also and was very pleased. They are 2 doors away from each other and owned by the same people, yet with completely different menus. Also, next time in Cozumel, take time to check out Camilo's (it is across the street from Gorditos). Lastly, if you are into craft beer, I ran into this place that has 3 pages of craft beer from all over Mexico and listed by geography and brewery. Location was near the Barracuda Hotel. Same side of the street on the water. Nice views. La Internacional Cerveceria: Av. Rafael E. Melgar 602, Centro, San Miguel de Cozumel, Q.R., Mexico.

Highlights to date:
Cuba - coffee...dark strong but doesn't rot your guts out like most. Could drink it all day long
Maui, Hawaii - Onion rings
Belize - Escobeche soup (chicken and onion soup)
 
Indonesia: satay, gado gado, rendang, mie/nasi goreng .... And sambal on everything.

Mexico would be tough to name a single item because I love them all. Maybe coctel de mariscos / campechana.

The ceviche in Panama was the best I have had anywhere.
 
Cuban Coffee Queen in Key West has the best variety of Cuban sandwiches that you will ever put in your mouth. The coffee is excellent as well, but their sandwiches alone are worth the trip to Key West.
 
I used to live close enough to Syracuse that I would normally fly out of SYR, but far enough away that it made sense to go there the night before. A dive trip almost always started with supper at the Dinosaur BBQ.
 
We first discovered cracked conch in the Florida Keyes and thought it was delicious so we always look for it when traveling in the Caribbean - but it isn't always available and they often try to sell you bready conch fritters instead.

Provo in the Turks and Caicos is one of the best places to find conch, almost all the restaurants carry it, and Da Conch Shack is a unique and fun experience!

On Grand Cayman, the George Town Yacht Club, Macabuca, and the Cracked Conch all have delicious conch. And My Bar at Sunset House offers a wonderful red conch chowder. The Hungry Iguana on Little Cayman also has very good cracked conch.

Vietnam - Pho & Vietnamese pancakes
Laos - coffee & Larb (aka larp) chicken salad, packed full of delicious flavor including lemongrass, lime, cilantro and chili.
Cambodia - Amok curry with seafood steamed in a banana leaf
Singapore - Chili crab
Hong Kong - Dim Sum
