Can anybody let me know what white balance settings they use when using the camera with an ikelite strobe (I use the DS51) Currently i use the Flash setting is there a better setting to use?

Why not just take a photo of a white slate UW and set WB during post?
 
When shooting my G9 with strobe(s), I've never used anything other than AWB (Auto White Balance).

When you use the "Flash" setting, do your pictures come out a bit red?
I use "cloudy". I saw it recommended somewhere and it seems to work fine, takes a little cyan out of the background. Daylight and Auto work too.

If you set it manually with a white card and the strobe, you will need to make sure that your subjects are the same distance away. This is especially true in less clear water. I recommend against this. Taking a picture of a white card and adjusting later, as suggested, is a great idea.
Use RAW.
 
I always shoot RAW and correct WB in post. By far the easiest way to white balance.
 
Hi I use flash setting on my nikon d40x. Flash setting is 5775 kelvin which slightly reduces the blue but gives very good color rendition of subjects. I use flash setting on land as i find auto has a blue color cast in the shadows. If you want to further reduce the blue vivid color setting will give bright colors on macro settings.
