I'm using the Canon housing with an Inon D2000w strobe. All of these shots are in AV mode, most are in macro mode. These are jpg's straight out of the camera. The only post processing I've done is reducing the size of the photos, and cropping. I'm shooting in green, silty water with 20-40ft of viz.

Amazing pictures, I'm planning to upgrade my camera and the G11 is my best option son far, can you use the TTL cable with the canon housing?

If you are using the Canon housing, I would suggest going with an Inon (perhaps S-2000) or the Sea & Sea YS-110a, using the fiber optic cable. The S-TTL is very reliable with these strobes and is an excellent way to see a rapid improvement with your images, both in color and detail.

The EXIF data on the first Leopard Toadfish photo:

Shutter Speed = 1/60 second
ISO Speed Ratings = 80
Aperture = ƒ/4
Focal Length = 13.76 mm

In AV Mode (Aperture Priority) I simply set the fstop (f4) and the camera does the rest. I match that setting on my strobe, and it determines the amount of time to stay on. All I have to worry about on most of these shots is composition, and where to aim the strobe. The camera does a fantastic job with exposure. I seem to have less blown highlights, even on lightly colored or reflective subjects. Also, most of these shots are in macro mode. That was the setting I changed the most. If I wanted to focus a foot or more away I would turn off macro.
