We have been to Palau, so we are familiar with the flight schedule for that trip. I am just looking for the flight schedule... which days, the planes fly in and out of Chuuk. When I do a search for prices, I am finding anything from $3300-5500 per person and I know that can't be correct.

Checking departures from Guam, there's a flight on Mon and Fri at 9 am, Wed at 10 am, and Sun at 7:45 pm. Then just back up from there. Say you need to be on the Odyssey on Sunday, boarding at 5 pm. You might be able to fly in on Sunday and arrive at 9:35 pm because the alternative would require an overnight in Guam and two nights on Truk before boarding. To make the 7:45 pm flight out of GUM, you can take the flight that leaves HNL at 3:25 pm Saturday and arrives in GUM on Sunday at 7:05 pm (normally not enough time to change flights, but it works in Guam). That means the 10:30 am Saturday flight from LAX, arriving in HNL at 1:44 pm.
Departure from Chuuk sucks because it's at 2:30 am Monday, though you can arrange for a day room at the Blue Lagoon. That puts you in GUM on Monday at 4:05 am, then the 6:30 am flight to HNL which arrives on Sunday at 5:40 pm, and finally the red-eye back to LAX departing at 9:35 pm and arriving on Monday at 5:10 am.
Using those parameters, I chose a random departure of Saturday, Jan. 14, leaving Chuuk on Monday, Jan. 23, and the price pops out at $1,737. Checking mid-March, I get the same fare. Not cheap, but half of what you were quoted. This is one trip where you'd really want to use air miles if possible
