Easier diving in the Galapagos and penguins

The websites say land based diving is easier. What marine life do I miss out on if I stick to the easier sites and are they really that "easy"?

I'm not sure if I can ever get the kind of experience needed to do the more advanced stuff. I'm only OW and can only go diving for about a week a year.

What I really want to see though are penguins. Is it likely to see them if I stick to easier diving?
