250gsm marino wool has become my favorite. It feels great, smells great, doesn't feel wet. In a compressed neo suit it's great for me down to about 66-68F before I add another layer. I'd actually like to find more marino that's maybe a little thicker to layer up.

For colder stuff I have a fourth element arctic.... buy once cry once (I cried a little longer than most, but it was only once!)

For me Decatlhon (or similar) trekking second skin and/or fleece depending on suit
For my average water (18 - 24 C) does the job

For 75F? SEAC makes a relatively inexpensive thinner undergarment -- not good for real cold water, though. Before I finally caved and bought Fourth Element undergarments for the real cold stuff, I used a number of "anything not cotton" items.
