Our plane lands at 12:40pm. Our ride to the Princess Hotel Marina to meet our shuttle boat to Turneffe Island Resort leaves the airport at 2:30pm. Do we have enough time to get our bags & clear customs before the ride leaves the airport?

More than enough time. Also, isn't your shuttle to the Princess provided by TIR? Congrats on arriving late enough in the day that you don't have to kill time at the beautiful Princess.
