I used to live in Grand Cayman about 15 years ago and my dive operations of choice were Ocean Frontiers and FishEye (no longer in business). I will be heading down with my wife for 10 days of diving in January and wanted some input on the ops that I have found around the internet with good reviews plus any other recommendations that can be injected here :).

We have used Ocean Frontiers when diving on the east end (loved their shark dive 'educational' encounter before that was halted); DiveTech on the north west corner; Parrot's Land - they are closed now. Hire a dive guide to show you some of the out-of-the-way shore dives. All of these operators worked well for us.

I used to shore dive from Parrot's all the time. Now it is Don Fosters and I have dove from there on my last 2 cruises. Still a good place to dive from.
 
I am thinking we might do some shore dives with Dive Tech and boat dives with Ocean Frontiers. We are staying on SMB so I still have to pick a dive op or two out of there.
Since we have 10 days of diving I am thinking about trying out a few different ops (unless we fall in love with one). So many good choices to make. I am leaning towards picking between Neptune, Ambassador, Wall to Wall to start, then I would like to give Cayman Marine Lab or Indepth a go.
