were going on a carnival cruise on February 7th. Some of the stops are Aruba, Grand Turk, and Dominican Rep. We want to do a two tank dive. Any opinions on which stop, and anyone with actual experience on these excursions, like depth etc?

If you're going to dive in Grand Turk, I highly recommend Blue Water Divers (Grand Turk Scuba Diving: Blue Water Divers, Grand Turk, Turks and Caicos Islands). While the op the ship uses is a decent op, there is a good chance it will be a large group of divers. I have been diving with Blue Water many times, off of a ship, and they are a quality op. Also, if you are uncomfortable going past a certain depth (say 85ft), speak up on the dive boat during the briefing. You are responsible for you. There is no reason you and your buddy cannot stay at shallower depth than the group if you are uncomfortable diving to the max depth.

+1 on Blue Water Divers in Grand Turk. Ask for Mitch or Audrey. Very accomodating op. You should know your in port time and departure time. They will do everything possible to take care of your needs and you can set it up entirely by email correspondence.
