Sweet Mantis Shrimp! I never catch them out of their holes long enough to get a decent shot.

You need a strobe. It will transform these photos.

The only other hint I would give would be to get in a different position on photo one and two. They would be more interesting if shot from the side, meaning, get your camera closer to the bottom and shoot like you did with the shrimp, but even the shrimp shot could have benefited from your camera being closer to the bottom.
 
It's nice to see that there's interesting stuff photograph at Nha Trang.

As for the images, I agree with the advice to get lower rather than shooting from above. Additional thoughts:

1) Learn how to do manual white balance (especially if you don't want to invest in strobes right away). Here's how your two best shots would have come out if you had just done a manual white balance:

2) Get closer. Your shot of the two nudis together would have been both more interesting and more colorful if you had less water between the lens and the subject you captured.
