I have been leaning towards getting this camera as it appears to have many of the features I'd enjoy but I'm pretty darn new to digital. What lens would you suggest as a good starting point for UW photography?

The kit lens (18-55) is probably not a bad place to start. Take a look at Matt Segal's work with the 20D. Link on my site in the Resources for Photographers section.
 
I appreciate the links SWS. Matt Segals link is just what I need. I honestly don't know a lot about digital but I'm learning. I don't want to buy twice so I'd like to start off with what I need the first time. The shop I instruct for carires Ikelike and I see that this is what Matt Segals uses, a good step there :)

So much to learn..........

Matt is a good guy and I am sure if you e-mail him that he would be glad to answer any questions. Also, Ryan at Reef Photo is an excellent resource. I have been very happy with all my Ikelite products and feel that you can't go wrong with them. I have a link to Peter Schulz's site on the D70 as well. I seem to recall Peter saying that when he bought his D70, that was his first choice but that now, since the 20D has been released, he would go with the 20D. Good luck and have fun. Digital has really opened up a new world for u/w photography.
 
My knowledge base is expanding. I've purchased a couple of books and I'm going into this, less blind.

It appears I won't regret my choice of hte 20D. I have all those EOS Canon lenses I can use so I won't need to purchase many to switch to digital.
