Oh boy, you are going to get a deluge of replies for this one!

As you are already in Victoria look at some of the great coastal dives there like Popes Eye. Diving with seals etc

Some great wrecks off of Merimbula near NSW border.

Right now its Minke Whale season in the Great Barrier Reef, so look at Mike Ball or Spirit of Freedom as the best 2 going here. More expensive than a lot of coastal places but a once in a lifetime experience. Only until September.
 
Many great ozzie dive sites covered in previous threads under regional forums..
 
If you have the time for it, the liveaboard charters to the outer reefs that are run by Pro Dive in Cairns are a good bet. This information is most likely worthwhile to you as you posted this 11 months ago... :)
