I just bought the Apeks DST Din first stage, and I bought a DIN to yoke converter so I can be able to use any tank I come across.

My concern is that the adapter isn't attaching flush with the first stage - from what I was, there's different numbers of threads to prevent 300 bar tanks being used with regulators that aren't rated for them. I just wanted to make sure that this adapter will work with the DST even though it's not flush.

It's fine. The DIN reg has enough threads to let it screw into the 300 bar tanks and still have the o-ring seal. That same o-ring seals against the inside of the female part of the adapter...it just doesn't take all the threads engaged to do it.
Be sure to rinse the adapter after each use so it doesn't seize up on your reg.
