Just wondering if it's ok to use the Apeks AT20 Octo with an Atomic B2. Or for that matter is it ok to mix and match just about any octo?

According to another recent thread yes. But not with Poisedon 2nd stages.
And the IP must be matched between the regs.

Remeber also that the AT20 is a warm water Regulator(Apeks words, not mine). It is not recomended for Cold Water. If your using it in warmer water it should be fine.
