I am not Doc but I believe I can answer your question about the manual WB. The HC7 has a "one push" which will adjust the WB according to the ambient light, then you may use the shift to further adjust it if you like. So I guess it is partially manual to some degree. When you have enough ambient light and a nice patch of sand it will adjust very nicely using the "one push" button.
 
Spiderwebb, that is correct, but the Seatool housings do not have any control that touches the LCD.
 
Yes, but it seems on the DX (higher end) models,there is a "Manual button" that when used along with the Cam Control Dial, one CAN adjust WB while UW...or at least that is what the Directions seem to indicate...?
 
Nope, that "manual" button along with the cam control dial will only give you control on Focus, Exposure, Shutter, AE Shift, and WB Shift. The WB shift is very subtle and I don't think it will help that much u/w. It's more for adjusting minor WB topside, for ex. to fix the skin color etc...

If the Seatool had a way to access the MWB on the LCD, I would have been all over that housing given how compact it is.
 
I think Equinox and Aquavideo also provide a pretty complete Mechanical control set.
