I'm trying to find a decent fare to get to Roatan for a couple of weeks, leaving sometime after Dec 26th and returning to Texas around or before Jan 12th. Best fare I have found so far is the Houston nonstop (with a connection from San Antonio) for $830....ouch. There's got to be a cheaper way, especially with flexible dates. Any suggestions?

I assume you've tried all the usual sites... sidestep.com farecompare.com (just did it from Houston and it had it for 570)
 
Looks like airfare has really jumped up....we usually drive to Houston and fly out of IAH to Roatan saves a little bit.....Dec and Jan are usually expensive months to fly....you might try
Yapta Yapta - What is Yapta? this site will track your flight you want and let you know when it goes down....not sure when you want to book... I even checked TACA they were higher this morning than CA...good luck
 
Try Spirit Air - They have a flight leaving the 27th and returning the 12th for $343 total.

But it's to/from Ft. Lauderdale. And the return leaves at 2AM...

Maybe Southwest has a cheap flight from San Antonio to FLL? We can get there from here for $200 r/t. on SWA. But maybe not over the holidays...

Spirit, Southwest, TACA and some of the other regionals don't always show up on the major travel sites.
 
Most expensive time of the year to fly.

I have free lodging in Aruba for the week after Christmas but am not going due to airfare.
 
Airfare to Roatan is frequently in the $900+ range from Seattle.

A lot of people seem to forget to consider calling a travel agent. This year, I called a travel agent to set up my trip to Roatan. She was able to get me a direct flight (from Seattle, that means Seattle to Houston, then Houston to Roatan) for $730. From Seattle, that is a very good price.

Instead of jumping from website to website. You might try calling a travel agent who specializes in dive travel and let them do all the leg work. I recommend South Pacific Island Travel at 1-877-773-4846 or South Pacific Island Travel.

I know... the name says South Pacific... but they have a Caribbean specialist on staff.
