When I reached out to my GUE Fundamentals instructor a couple of years ago, he too strongly suggested to have the course in doubles and drysuit. Even if you're not aiming for "technical diving" I think that the whole experience of fundies with doubles is more complete and in any case...

Although this practice is not limited to GUE, i think it would be great if all OW and AOW training programs had video recording of the trainees.
It's pretty simple nowadays (with all these action cameras available) and I'd say it greatly enhances the training procedure.
GUE SOPs still suggests 20/85 in DecoPlanner. Hm...
edit: at the same time they give a red warning: "anything below the 21m stop is a slower ascent. There are no “deep stops” – just a controlled ascent!"
It seems (based on latest GUE live video) Chris Le Maillot and Kirill Egorov were among the people who prepared this class for a couple of years. Le Maillot explained that depending on the environment some GUE divers already used sidemount configuration. And that experience shall be transformed...
Second what taimen said. I'd say go with doubles and drysuit from the beginning. Don't overthink if you'll get a rec or tec pass. Just enjoy the class ;)
