I like the idea. I was just pointing out the risk. I like that it was done at the end of the course and not just part of the required pool dives. I will point out though that 5 ft. can still cause some damage in a lung over-expansion.
That's a little risky for brand new divers. Snorkelers are always taught to never dive down and breathe off of a friend's regulator due to risk of breath-holding to the surface. The same risk is involved here if the diver feels the flight instinct and bolts for the surface holding his breath.

What about a dry suit is going to make you more comfortable in Cozumel? I can't imagine ever needing a dry suit there. The temps are very comfortable...nowhere near dry suit temps.
For the Caribbean I would go with Spanish, French, German or Dutch. Those are big ones, depending on the area of the Caribbean you're looking to teach in.
The air wouldn't be sucked out of you if you opened your mouth because the air you breath in has been regulated to match the pressure of the 300' depth. If they're the same pressure then there is no gradient.
