The large green "T" cylinders are filled by gas supply companies. It works much like propane from the supermarket, where you purchase the tank, then the gas supplier swaps it out for you when empty so you're only paying for the gas and maybe some service fees.
I have personally rolled off my Sidemount tank on multiple occasions with simple arm motions. It is entirely possible, and I was even taught about it in my cave class.
I would have no issues diving again with 90 minutes on the entire system, but since I have the option to dump and rotate, it's not a lot of sorb tossed and it makes me feel better.
I dive a Sidewinder, and I rotate canisters. I would only keep the exhale sorb if it ended the dive completely dry. If I do a 90-minute dive, I'm tossing the exhale sorb dry or not.

It is pretty easy to rig symmetrically and just swap heads. I do it all the time. There is something about having the fresh sorb on the inhale side that makes me feel more confident.
I had mine fitted for 400 gram socks. This will be an option when you get measured. I have no issues wearing a cycling sock+wool winter hiking sock+Forth Element Arctic sock.
I'm very happy with my signature cut TLS. It's held up well so far even with scrapping through tight caves. I have a few friends that are happy after switching from FLX to TLS due to the increased mobility.

There are at least three distinct fairly popular sidemount "standards". All can be used in any environment and have there pros and cons. Sounds to me you found two shops that simply do it differently.
There is also no attempt to compensate for how dives skew to the extreme between single tank NDL toward rebreather. Not too many people buy an RB to swim around on shallow warm reefs for an hour.

Additionally, way fewer 100 meter + OC dives and 5k+ OC cave penetrations happening these days.
I dive a lot in high mineral fresh water. I've found the minerals can dry and clog the pressure sensor port. Rensing with warm tap water usually does the trick.
Mine has been replaced by Shearwater as well.
