Where is the line drawn between assisting and instructing? Once a skill has been demonstrated by the instructor, can the DM's then watch over and correct students? Getting help from his wife already sounds verboten, but has been given as advice.

I'm not an instructor. I notice that the ideal instructor doesn't teach kneeling. I also notice that the consensus is that task overloading, especially for new divers, is a bad thing. Further, buoyancy isn't something most new divers pick up easily nor is it easy to do in shallow water...

When I dove in Moorea, French Polynesia, we weren't feeding, but the Lemon Sharks followed us around til the end of the dive. I was told other shops fed them, so there's definitely an association with divers.
