In my experience I have never personally experienced a failure of either, nor have I seen it happen on the trips I have been on. If I were to have my choice of a hp hose blowing or a transmitter failure I would choose the transmitter failure though neither...
But that is not the point. The point is that if the transmitter fails or the hp hose fails it is not an emergency but it is time to surface at a safe and reasonable rate.

I made a trip on the AquaCat. That is a great boat! Plenty of room and very comfortable. The food was good and plentiful. You will have a great time. I am still at a point that diving is the most fun you can have wearing neoprene and breathing underwater.

I don't have any experience with the land based resorts but I have done dives off of all 3 islands via live aboard. If the resort on Little Cayman is as great as I have read, I would say Little Cayman wins my vote, the other 2 are just okay compared to LC.
A dive computer read out is a representation of the tables. The tables are a representation of the same thing, printed out on a piece of paper. The tables were generated by a computer. They represent the same thing in different formats.
