I use the stainless DIN inserts from XS Scuba , OMS, Highland etc.. About $18-$15/ea. new.
They come with an Oring in the end.
They serve 2 purposes - one to keep junk out (just like the plastics ones) but also to keep the gas in the tank if the valve gets bumped open during transport...

Let me preface my comment with I haven't dove doubles yet so I could be wrong in my understanding of how they are connected....
But, doesn't a Pony bottle offer a higher degree of redundancy than doubles???
With doubles isn't the manifold Isolation Valve a "single point" failure mode...
I dive a Catalina AL 19cu back mounted with a QuickDraw Bracket attached to the Tank Cam Strap and NOT to the main tank (in case the main tank comes loose you will lose your pony too).
I mount it upside down on the right side of the main tank so it is really easy to just reach down and back...

His harness looks painful on the shoulders as most of the weight will be borne by his shoulder straps.
For boat diving it's fine but if you have to carry your stuff very far it could be a "pain"!
