We're booking everything through Soller Divers. Are these spots accessible or likely dove from a shop in Port de Soller? Or would we have to make a day trip to the areas?

No, not from Port de Soller. You will have to do a trip to these areas.
Cap Formentor is amzingly beautiful, so dying there will be from happiness after the dives...
 
First, thank you VERY much for the information above.

We know that visiting Spain in July and most of August will be very difficult. We can visit in June and late August to late September. You think that this time frame will be better in terms of less crowds and good diving?
