Does anyone know if there are second stages currently manufactured that can be connected from either side?

The only one I know hasn't been made in decades:
SP AIR.jpg

As in from both? (Which some people have done with Air1), or convertible?

There are. The much better question is why would you want to?

R190

R380
R390
D420
G260
Apeks XTX series

There are many others.

Its modern replacement - the D420...

There is an OEM somewhere that makes what was the HOG "Switchback"....

The Poseidon XStream (just turn it over)

These can be connected at the same time like the AIR1? The answer to why concerns independent doubles and the elimination of regulator switches.

No, they cannot. Learn to switch regs if you’re diving independent doubles or get a manifold.

Too bad. I've been doing regulator switches for decades, probably learned long before you started diving. Thanks for the info and advise.

As luck would have I am the owner of freshly serviced SP AIR 1 serviced by our own @rsingler so I'll be using that for my new ID configuration.
